This simple, vegan one-pot pasta dish brims with cozy Mediterranean flavors and can feed a crowd. It’s wonderful as a main or side dish.

Ingredients

  • 2 tbsp (30 mL) olive oil
  • 1   onion
  • 2   bell peppers, any color
  • 2 cups (500 mL) vegetable broth
  • 2 cups (500 mL) orzo pasta
  • 1 can (14.5 oz./411 g) fire-roasted diced tomatoes, undrained
  • 1 can (15.5 oz./440 g) chickpeas, drained and rinsed
  • 2 tbsp (30 mL) Greek Rub
  • ¼ tsp (1 mL) red pepper flakes
  • ¼ tsp (1 mL) salt
  • 5 oz. (150 g) baby spinach leaves
  •  Optional: Crumbled feta cheese, sliced kalamata olives

Directions

  1. Preheat the oven to 400°F (200°C).

  2. Heat the oil in the 6-qt. (5.7-L) Enameled Cast Iron Dutch Oven over medium heat for 3-4 minutes.

  3. Working in batches, chop the onion and bell peppers in the Manual Food Processor. Add to the Dutch oven and cook until softened, about 3–4 minutes.

  4. Add the broth, orzo, tomatoes, chickpeas, rub, red pepper flakes, and salt; bring to a simmer.

  5. Remove from the heat. Stir in the spinach. Cover and bake until the liquid has been absorbed and the orzo is soft, about 12–14 minutes.

  6. If you like, top with feta and olives.

I made this and it was fantastic! I don't have a 6 qt pot so I used my 4 qt RockCrok Dutch Oven instead… it worked out perfectly fine, just had to add the spinach slowly to get it all stirred in.

I use low sodium chix broth and add more herbs, & use fresh grape tomatoes & jalapeños in place of canned… delicious!

This came together so easily and quick. It was delicious! I stirred in Trader Joes Olive Tappanade at the end of cooking and Trader Joes Feta at serving time. We went back for more and leftovers were enjoyed. A great weeknight meal. I'm making this for my friend's birthday.

Greatly appreciate that Pampered Chef is now featuring more meatless & dairy-free vegan recipes that work well for a gathering in addition to supporting your own family's meal plan! Nice to have a new recipe up my sleeve for sharing at a potluck - can't wait for those times to return! :) ... Keep it going, Pampered Chef! All of America needs more heart-healthy recipes, especially during a pandemic!!! SWAP SUGGESTION: Don't have orzo, but you see a large sweet potato in your pantry? Use the Veggie Spiralizer & Chef's Knife to make sweet potato "rice" and substitute for orzo - I learned this process from an earlier PC recipe. :)

I didn't have have orzo so I used gemelli pasta, adjusted simmer time to 4 minutes and then followed directions. It was perfect!

I don't miss the meat with this dish! Very tasty with lots of flavor and low in calories when trying to eat healthy! I will definitely be adding this to my recipe schedule.

Good healthy recipe, and easy to make. I used Chicken broth instead of Vegetable broth. I definitely think adding the olives and feta made for the perfect balance of flavors, not to mention, a visual appeal. It was good eaten cold too!
