This simple corned beef and cabbage recipe is the perfect way to celebrate St. Patrick’s Day—or any day!
Ingredients
- Corned Beef & Vegetables
- 2–3 lbs. (1&ndash1½ kg) corned beef brisket
- 1 medium onion, peeled and chopped
- 2 carrots, peeled and chopped
- 1 lb. (450 g) small red potatoes (about 6), quartered
- 3 cups (750 mL) water
- 1 tbsp (15 mL) Rosemary Herb Seasoning Mix, divided
- ½ green cabbage, cut into wedges
- Sauce
- 1 container (7.5 oz./212 g) chive & onion cream cheese, softened
- ¼ cup (60 mL) milk
- 3 tbsp (45 mL) prepared horseradish
Directions
Trim any excess fat from the brisket and place it in the Rockcrok® Dutch Oven.
Add the vegetables, water, and seasoning mix.
Place the Dutch oven in the Rockcrok® Slow Cooker Stand and cook on LOW for 8 hours.
Transfer the beef to a cutting board. Add the cabbage to the Dutch oven and microwave for 8–10 minutes, or until the cabbage is tender. Slice the corned beef.
- In a small mixing bowl, combine all of the ingredients for the sauce. Serve with the corned beef and vegetables.

Perfect Corned Beef
Rated 5 out of 5 starsThe meat and vegetables came out perfect and so delicious. I can't say that the horseradish sauce was a hit and both my adult sons love horseradish. Made a double batch for St. Patrick's Day because I cooked two briskets and ended up throwing the bulk of the sauce away. In the future I'll stick by my old sauce of melted butter with horseradish, dill and vinegar (which also tastes awesome over a ribeye steak). This is a great recipe for the corned beef though.

Great sauce
Rated 5 out of 5 starsI used my quick cooker in slow cooker mode. Followed the ingredients list and added my cabbage in the last 15 minutes. Dinner was delicious, and the sauce was a great combination. I will only make this sauce from now on for my corned beef, game changer!

Rated 5 out of 5 starsI usually suck at making corned beef but this was my best one yet. I made sure I bought flat cut and followed the directions to a T and it came out perfect! If you love horseradish you'll love the cream sauce too.

Rated 5 out of 5 starsI love corned beef and cabbage and this recipe did not disappoint. It was easy to assemble and the kitchen smelled wonderful as it cooked. I was skeptical about not cooking the cabbage with the rest of the dinner and cooking it in the microwave at the end but it worked. Definitely a do-over.
